 Ingredients (Serves 2–3):

For the Pasta Base:

  • 2 cups penne or fusilli pasta (eggless)
  • 1 tbsp olive oil or Jain-safe cooking oil
  • ½ cup finely chopped capsicum (use red, green, yellow)
  • ¼ cup blanched sweet corn
  • ¼ cup chopped zucchini (optional) 
  • ¼ cup chopped tomatoes (deseeded)
  • Salt to taste
  • ½ tsp black pepper powder
  • 1 tsp sugar (to balance acidity)

For the Jain Tomato Sauce:

  • 2 tbsp Jain Bliss Tomato Powder
  • 1.5 cups water (to rehydrate the powder)
  • 1 tsp olive oil
  • ½ tsp black pepper
  • ½ tsp Jain Bliss Oregano
  • ½ tsp Jain Bliss Chilly Flakes (adjust to taste)
  • 1 tsp Jain Bliss Peri Peri Masala (optional, for heat)
  • Pinch of rock salt

 Instructions:

  1. Cook Pasta: Boil in salted water until al dente. Drain and set aside. Save a bit of the pasta water. 
  2. Make the Sauce: In a pan, heat oil. Add Jain Bliss Tomato Powder dissolved in water. Stir well. Let it simmer and thicken. Season with Oregano, Chilly Flakes, and Peri Peri Masala.
  3. Sauté Veggies: In another pan, lightly cook capsicum, corn, zucchini, and tomatoes for 3–4 mins. Keep veggies crunchy.
  4. Combine: Add sauce and pasta to the sautéed veggies. Mix gently. Use reserved water to adjust consistency.
  5. Finish: Turn off heat. Sprinkle more Jain Bliss Oregano and Chilly Flakes before serving.
