Jain Hakka Noodles Recipe (No Onion, No Garlic, No Carrot)
Lightly spiced, stir-fried noodles packed with veggies — without compromising your beliefs. These Jain-style Hakka noodles are quick, colorful, and perfect for weeknight dinners or potluck parties.
Ingredients
Base:
- 150–200g Hakka noodles (eggless, Jain-friendly)
- 1 tbsp oil (preferably sesame or vegetable oil)
- Salt for boiling noodles
Veggies (customizable):
- ½ cup shredded cabbage
- ¼ cup capsicum (any color), thinly sliced
- ¼ cup French beans, finely chopped
- ¼ cup boiled sweet corn or baby corn (sliced)
Sauces & Seasonings:
- 1 tsp soy sauce (check for no onion/garlic version)
- 1 tsp green chili sauce (Jain-friendly)
- 1 tsp vinegar (white or rice vinegar)
- ¼ tsp black pepper
- Salt to taste

Boil the Noodles:
Boil water with salt. Add the noodles and cook until 90% done (al dente).
Rinse under cold water immediately to stop cooking.
Drizzle a little oil and toss to avoid sticking. Set aside.
