Jain Manchurian with Gravy
Manchurian is a Indo- Chinese dish of deep fried in flavorful fritters served in a spicy and tangy sauce. Jain Manchurian excludes onion,garlic, and root vegetables but do not compromise with taste as Jain Bliss is there to help you out, let’s prepare tastier and spicy manchurian balls with gravy.
Ingredients for Manchurian Balls :

Cabbage (chopped finely)

Capsicum (green for more spice)

Green Chillies (4-5,finely chopped)

All purpose flour - (Maida- 3 tbsp)

Cornflour (4tbsp for binding)

Dried ginger (soonth1 tsp)

White pepper powder 1 tsp

Salt

Oil for deep frying
Ingredients for Gravy :

Oil (1 tbsp)
-
French Beans (8-9 finely chopped)
-
Capsicum (Red,Yellow,Green for colour chopped finely)

Green chillies (from balls mixture)

Cornflour slurry (2 tbsp) made with ½ cup water
-
Dried ginger (soonth 1 tsp)
-
Black pepper powder (1 tsp)
-
Red chilli sauce (1\ ½ tbsp)
-
Jain soy sauce (1\ ½ tbsp)
-
Jain schezwan Sauce (2tbsp add as per spice)
-
Sugar
-
Jain Tomato ketchup
-
Salt
-
Coriander
-
Water
Detailed Recipe of Manchurian Balls
- Prepare the Veggies : Wash the vegetables (cabbage,capsicum), and drain out the water properly for binding the veggies in balls as after sometime veggies will release moisture.
- Prepare the dough : Mix cabbage,capsicum,green chillies,Dried ginger (Soonth), white pepper powder, salt, maida and cornflour in a bowl and bind softly in a dough.
- Form the balls : Take small portions from the mixture and form them into tight balls. The moisture from the vegetables should be enough to bind them. If needed add a few drops of water but be cautious not to make the mixture watery.
- Deep - Fry the balls : Heat oil in a wok or deep-frying pan. Once the oil is hot,gently drop the balls into the oil and deep-fry them until golden brown and crispy. Avoid overcrowding of balls in the pan.
- Drain : Remove the fried balls and place them on a paper towel to drain excess oil.
Make the Gravy step-by-step
- Heat oil in a separate pan or wok over high heat. Add the dried ginger (soonth) and slit green chilies and sauté for about 30 seconds.

Add the finely chopped capsicum(red,yellow,green),french beans and stir-fry for 1–2 minutes.

Add the soy sauce, tomato ketchup,red chilli sauce, schezwan sauce, black pepper powder, sugar, and salt. Mix well.

Pour in the water or vegetable stock and bring the mixture to a boil.

Add the cornflour slurry, stirring continuously to prevent lumps. Continue to stir until the gravy thickens and becomes glossy.

Adjust the seasonings to your preference.

Combine and serve: Add the fried Manchurian balls to the sauce and toss gently to coat them completely. Garnish with finely chopped coriander and serve immediately, either dry or with gravy.
